Wholemeal Pasta Recipe

Once you’ve had this fresh home-made pasta you’ll think twice before going back to the store bought stuff.  The home-made fresh tomato sauce here goes well with it too.

Ingredients:

3 cups wholemeal flour

1 tsp salt

2 tablespoons of olive oil

4 medium sized eggs

Directions:

Mix all ingredients together.  Knead for about 5 minutes.  Wrap with plastic wrap and leave in fridge to rest for one hour.  Divide dough into pieces for rolling (it is best to do a small amount at a time).  Roll out as thin as you can!  You can now cut the pasta into any shape you like – fettucine, ravioli, lasagne etc.  If your dough was a bit moist you may want to leave the noodles to dry in the air for awhile before cooking.  Can be kept in an airtight container in the fridge for a couple of days before cooking if desired. 

Cook in fast boiling water with some olive oil and salt.  Will take about 7-8 minutes to cook.  Take a piece out and bite to see if it is cooked.
